What's in your Applesauce?

I recently discovered how EASY it is to make Applesauce! (Thanks to Aunt JJ and Nanna!) I did however modify the age old family recipe.

Mott’s Classic Variety – Original vs. Natural

(4oz serving , 90 cals, 20g of sugar)
Ingredients: Apples, High Fructose Corn Syrup, Water, Ascorbic Acid (To Maintain Color).

Now Mott's does have an applesauce that is not that bad: Healthy Harvest
But I am still skeptical at anything that says, "natural flavors".

HIGH FRUCTOSE CORN SYRUP!
Now here is the deal, ANYONE who had made applesauce with a sweet apple like "Gala" knows NO SUGAR is needed in applesauce! The apples alone are SWEET!

So here is a SUGAR FREE, SUPER FRESH, SUPER YUMMY, Applesauce recipe:

Peel, core and cube 10 apples of your choice.

Here is a handy dandy tool to use to peel apples: (Yes, it's on my wish list)

Put in stock like pot. Add one cup of water, dash of salt and about 1 tsp of lemon juice (to prevent the apples from turning brown)

Cook on low heat for 1 hour. Stir now and then.

Use a potato masher or blender and mix/mash then up to your liking.
Add cinnamon for additional flavor.
Place in fridge for up to 2 weeks? :)

Literally THAT EASY!

Now go, buy some apples, and make this YUMMY treat! I could not believe how fresh this tasted. Loved it warm too!  We did add cinnamon so it tasted like apple pie filling! YUM!

Remember to pair this treat with some fat like nuts for better nutritional absorption!

How "FRESH" is your "AIR FRESHENER?"

As I sit watching my daughter at her gymnastics class I hear a semi loud "SHHHHH" sound out of nowhere. I look around and cannot place where the sound is coming from but within seconds I smell flowers or what appears to be "flowers". Hmm? I begin to look around and notice a box on the wall in the waiting room.  A few minute later, I hear the noise again and realize this "box" is shooting out a chemical fragrance. I was disturbed to say the least.

I decided to do some research on Air Fresheners and this is what I found:

I began with "Airwick Automatic Spray Deodorizers" since that is what was at Calei's gym.  I found these "indoor chemical sprays" to be exceptionally toxic beyond words.

The aerosol is propelled by butane propane (a neurotoxicant) and other toxic chemicals.

They contain acetone which causes a laundry list of health issues (cardiovascular, blood, gastrointestinal, liver, kidney, respiratory, skin and organ toxicity) NOT good for a gym! (or anywhere else for that matter)
Specifically, they contribute to asthma, headaches, and nausea. 

I invited a friend to this gym for "open gym" and within minutes her son had a asthma attack. Not a coincidence! How many other kids/adults are effected by these sprays? PLENTY!

A MSN article states, "being exposed to these 1x a week can increase asthma symptoms by 71% and increase pulmonary diseases".

In September 2007, Time Magazine pointed out, "the phylates in these fresheners and the many negative health effects such as cancer, infertility and developmental issues that result from these chemicals".

Please also note, The Food and Drug Administration (FDA) has NO regulations on the use of phthlates! None!

Nourish M.D. and the Great Vaccine Debate!

I have yet to blog about vaccines.  Mostly, because it tends to divide people into two separate groups. Those who vaccinate and those that don't.  The in-between-ers are a minority.  This topic also tends to stir up fears and people become very defensive regardless on what side of the fence you are on.  Personally, I have seen vaccines directly effect children in a negative way, including my own child, therefore, I personally do not choose vaccinations.  I chose preventing disease and living a lifestyle that promotes health and a strong immune system. 

Anybody that knows me knows how much I love the Nourish M.D. gals!  #1 They have SO much common sense.  #2 They are not extreme.

Peppermint Patties anyone? Halloween Candy VS REAL Candy

I don't even know where to begin this blog post. Cut to the chase... I was horrified at the ingredients in today's "candy".  Calei did trick or treat for the fun of it, but she would never actually eat the candy...she knows better!

Like a science experiment, we dumped her bag of candy out on the kitchen table and began to read ingredients.  IF ANY parent, grandparent, child, adult, human, etc.. really KNEW what was in "candy" and understood the ingredients they would think twice before popping it into their mouth!

Without going on a tangent about the dangerous toxic ingredients I decided to post ONE comparison between REAL Peppermint Patties vs York Peppermint (science experiment) Patties.

Meanwhile, if you, like millions of people, have Halloween candy, take a peak for yourself! Malted Milk Balls had a huge list of ingredients I could not even pronounce!

Ingredients in York Peppermint Patties:

Sugar, corn syrup, semi- sweet chocolate (chocolate, sugar, cocoa, milk fat, cocoa butter, soy lecithin, PGPR, emulsifier, vanillian, artificial flavor), invert sugar, egg whites, and oil of peppermint.

BTW...To be on the safe side, Stick with REAL, ORGANIC Chocolate.

REAL Peppermint Patties:
This recipe was inspired by Elana Amsterdam at: www.elanaspantry.com
I modified this a tad.

1 cup coconut oil
1/4 cup of raw honey (or less)
1 TBSP Vanilla
1/2 tsp Peppermint Oil
1 cup dark chocolate chips 73%cacao or more (Melted)

In a small bowl combine coconut oil, honey, vanilla, and peppermint oil
Mix well
Spoon into mini muffin tins (or candy molds)
Leave room for the chocolate!

Place in freezer
Melt chocolate on lowest setting on stove
Pour over mint mixture and place back in freezer.
Takes about 15-30 minutes to harden
Pop out of tins etc..
Store in fridge.

These are REAL so they do "melt" in your hands :)



SUPER easy, very fast to make and taste WAY better then the fake mints!

P.S. Mark my words... watch how many people get "sick" post Halloween. Too much "junk"?? Probably. The body can only handle so much before it "breaks down" and gets sick.

Sesame-Ginger Dressing

Here ya go!

This dressing reminds me of Portillo's Oriental Chicken Salad dressing one of my fav's back in the day!). When I went to Portillo's web site to look up the ingredients in their dressing, sure enough, the nutritional info was NOT available! (sigh...)
 
Needless to say, Edie's ingredients ARE available! Here they are!
 
2 TBSP Rice Wine Vinegar
2 TBSP Naturally Fermented Soy Sauce or Tamari (I used Tamari)
2 TBSP Honey
1 TBSP Sesame Oil (this is SO GOOD!)
1 tsp of Sesame Seeds (I used more :)
2 tsp grated Fresh Ginger
4 TBSP Extra Virgin Olive Oil
 
Mix all ingredients until well combined. Store in glass mason jar in fridge.
SUPER quick and easy to make!
 
I added:
Romaine
Cabbage
Shredded Carrot
Variety of Bel Peppers
Cashews
Chicken
 
Holy smokes, this was AMAZING! Tasted JUST like the Portillo's salad!

NUTS and SEEDS...1.Raw 2.Soak 3.Dehydrate

You may say, "WHAT!", "HUH?", "WHY?"

Well read below!

First, buy only RAW nuts and seeds!  Nuts in stores have been roasted, toasted, and pasteurized to extend shelf life and usually contain a ton of junk ingredients that can cause illness.  No point in eating these kind of nuts.  The nutrition in these nuts and seeds are "dead".

Try to plant a processed almond in the ground and watch it NOT grow!  A raw almond will grown into an almond tree.

Second, in a glass bowl, soak your raw nuts in water and a bit of Celtic sea salt over night.  Why? Because nuts and seeds "as-is" naturally contain enzyme inhibitors.  These enzymes are unstable and are contained in the seed until needed during germination and for growth of the new plant.  They keep the nut from sprouting too early (think hibernation), but they can wreak havoc on our digestive system.  The salt helps activate enzymes.

You can mimic germination by soaking the nuts and seeds over night.  The water softens the nut/seed and the enzyme inhibitors go away and the enzymes are now available for use.  This is when they "come to life" and are ready for consumption.

Third, bake the nuts and seeds!
The next morning, rinse nuts/seeds and place on a cookie sheet. Sprinkle with Celtic salt.  Bake on the lowest temperature on your oven (150 degrees or lower) all day.  Dry them out or they can get moldy.  The best plan is to use a dehydrator and dehydrate them. 

Store them in glass mason jars. Walnuts should be stored in the fridge.

Your nuts/seeds are an excellent source of available digestive enzymes which most people don't get enough of so the human body has to work hard to produce these enzymes for many essential digestive purposes!
Also, the more digestive enzymes we have to make the less metabolic enzymes we CAN make.  The metabolic enzymes help run all the systems in our body!  So get those digestive enzymes from food!

This traditional method of preparing nuts has been around forever! Think Aztecs! Yes, a LONG time!

What to do with nuts/seeds:
* eat them out of the jar!
*grind up and use for yummy nut flours and bake with them (think home made Larabars!)
*grind into nut and seed butters
*sprinkle in salad or eat with fruit for better absorption of nutrients

Last but not least, Raw, Soaked, Baked nuts/seeds will be the BEST tasting nuts/seeds you have EVER had! Believe me!

Francis M. Pottenger "Pottenger's Cats"

This can be considered Part 2 of Weston A. Price.  Pottenger's research compliments Weston A. Price.

Francis M. Pottenger Jr. M.D. was dedicated to preventing illness and studied the role nutrition plays in maintaining good health.  From 1932-1942 he did research on cats.  He discovered that deficiencies in nutrition led to deficiencies in bone maturation by effecting the adrenal and thyroid glands.  These are very much our current health concerns of our day! 

To summarize:

Raw milk/Raw meat/Cod Liver Oil consuming cats = healthy cats and kittens generation after generation.

Pasteurized milk cats = NOT healthy: They had respiratory problems (Similar to what we see today. Asthma can be cured for some by consuming RAW milk and eliminating all pasteurized milk)

Evaporated and sweet condensed milk = even worse!  These cats were very irritable, noting behaviors like pacing back and forth.

Vitamin D milk = These cats has calcium/phosphorus ratios that became imbalanced and there were marked changes in bone composition. Rickets was also noted.

Raw milk from cows who consumed dry feed showed similar deficiencies as with pasteurized milk!  There was major hormone variations in the raw milk between cows  that consumed dry feed vs fresh feed. This is why it is so important if you consume dairy to only consume RAW dairy products from healthy organic cows grazing on grass in the sun all day!  His research clearly shows that the nutritional value of animal products such as milk depends on the nutritional value of the producing animals diet! This also includes eggs and chickens!

Heat processed and cooked meat effected the cats.  The cats had reproductive problems including efficiency in delivery and nursing effectively  The kittens had problems in: skeletal development, dentofacial structure, calcium/phosphorus content in bones, issues in resistance to infection, and allergic sensitivity.  On a poor diet, each generation got weaker and weaker.  Sound familiar??

I love the generational research. It clearly shows that cats who are fed a poor diet got worse each generation.  By the 3rd generation the cats were so sick and producing very sick kittens with brittle, porous, easily fractured bones and major calcium/phosphorus deficiencies!

Allergies and Thyroid:
Cats and kittens that consumed raw food and Cod Liver Oil had NO allergies or thyroid issues.  None!

However, milk allergies were super common on second and third generation nutrient deficient cats, including asthma.  Think about how "allergies are on the rise" now in our day? See the correlation!?

These cats and kittens intestinal track was elongated, lacking elasticity and tone.  They had skin disorders.  They had significant thyroid problems.  Did you know, a bad thyroid leads to SIGNIFICANT reproductive problems? I think about all the people these days, on poor diets, who "think" they are eating healthy, yet cannot conceive!  From everything I have read, I firmly believe eating SAD (Standard American Diet) is contributing to weaker and sicker generations. 

Here is another interesting discovery:
Cats who were fed raw milk from fresh fed cows with cooked meat did "better".  The raw milk lessened the effects of the cooked meat.
Cats who were fed raw milk from dry fed cows with raw meat had normal kittens. 
Therefore, raw meat countered the deficiency in the dry feed!

Finally, this is the part I love the most! He discovered you can REVERSE health conditions by switching to a nutrient dense healthy diet! This is SO promising! No pills or drugs. No fad diet! Just REAL FOOD, prepared properly. How much easier can it get!?

Creamy Garlic Salad Dressing (Dairy Free!)

I am SO addicted to this HEALTHY yummy salad dressing!  Its SO simple to make! As you probably know from reading this blog, MOST salad dressings you buy in the store are JUNK! (Even the "natural and organic" ones!) Here is one salad dressing you AND your body will LOVE!

I use a blender.

1. Add approximately 1 cup macadamia nuts to the blender and pulverize as much as possible.
Remember to properly prepare your nuts but soaking in Celtic Sea Salt over night. You can dehydrate them for this recipe OR use in the morning after they are soaked (non dehydrated)

2. Add the following to the blender:

Chop 1-2 cloves of fresh garlic/chopped/minced
1/4 tsp of Celtic Sea Salt
1/4 tsp of Dry Mustard
2 TBSP of Braggs Apple Cider Vinegar (or more)
2TBSP of Edens Organic Red Wine Vinegar (or more)
1 tsp of Honey (optional) or 5 drops of liquid Stevia

Blend for a few seconds

Add 2/3 cup of Organic Olive Oil

Blend for a few seconds

Add approximately 1/2 c water

Blend for 2 minutes (or more) until creamy

Transfer to small glass mason jar (Walmart has a TON of these in stock right now!) and store in the fridge up to 2 weeks.

This dressing tastes fabulous as a chicken salad base, as a dip on a variety of bell peppers/sugar snap peas, or straight out of the jar! It's REALLY amazing and loaded with nutrients!

Weston A. Price

First, HELLO everyone!

I have not blogged as often as I would like the past 2 months. We were really enjoying the remaining of the summer and knew it was coming to an end soon! (Although, Monday was SUPER warm and we headed to the Dunes!)  Fall schedule is in full swing and blog posts will be more consistent and often!

So let's get started!

I was blown away by the research I read from Weston A. Price.  Price is was a brilliant Cleveland dentist known as the "Charles Darwin of Nutrition".

In 1939 he published Nutrition and Physical Degeneration.  In this book he describes how he traveled around the entire planet in search for the cause of dental decay and physical degeneration.  By studying people's teeth all around the world, he correlated cavities, deformed arches, and crowded, crooked teeth as a sign of physical degeneration directly resulting from nutritional deficiencies.

He discovered that isolated "primitives" had the healthiest teeth! They had beautiful, straight teeth with no decay and their bodies were resistant to the diseases of the time! He also identified the factors that contributed to their ideal health!  Their traditional diets were rich in essential nutrients.  They consumed 4x's  the calcium and other minerals and 10x's the fat soluble vitamins from animal foods (butter, fish, eggs, shellfish and organ meats).

He also learned from the primitives about the importance of good nutrition for mothers and fathers pre-pregnancy, during pregnancy and post pregnancy.  Children were spaced out to permitt the mother to maintain her ideal health.  Special foods were given to pregnant and lactating woman rich in fat soluble vitamins A and D. These nutrients came from FOOD and NOT a "pill".

He noted the dramatic difference in these primitive diets and health compared to the impoverished foods from the "civilized" people.  "Civilized" people of this time consumed sugar, white flour, pasteurized milk and convenience foods filled with extenders and additives.  Consumption of these items is MUCH worse now, on top of the "new" chemicals added to "food". (I hesitate calling processed food, "food")

The photographs Dr. Price took of these people show marked differences in facial structure among primitive people who consumed "traditional diets" vs. civilized people.  These photos clearly show how diet impacts humans in both a negative and positive way.  We can learn so much about how we "should" be eating from Price's research. 

I am going to follow up this blog with the research of Francis M Pottenger Jr MD.  His research on cats compliments the research done by Dr. Price.  This will also be the topic at our next REAL FOOD meeting on October 21, 2011 from 6:30-8:30 at my house.

Gut and Psychology Syndrome

If you are wanting to heal internally and get rid of allergies or other "symptoms" GAPS (Gut and Psychology Syndrome) diet may be for you!  This diet heals the gut which in turn can eliminate or improve symptoms/disorders such as: Autism, Dyspraxia, Dyslexia, ADD/HD, Depression, Schizophrenia, autoimmune disorders, gastrointestinal disorders (including GERD), asthma, eczema, etc... This is one of the top 5 books I recommend people read. This is the diet Calei and I follow.

Dr. Mercola recently interviewed Dr Natasha Campbell-McBride MD.  This is a must see 6 part interview explaining GAPS and answering the questions SO MANY people have and where to begin to improve their health.  The information contained in these videos is exceptionally informative. REAL FOOD MEET UP GROUP!

It's official! The Real Food Meet Up Group met on July 30th at my house! It was a huge success and the beginning to some fabulous meetings regarding REAL FOOD!

It also felt great being surrounded by such like minded people!

We began the meeting sharing our story.  Everyone had their own reasons for joining the group, however, the overall theme was that everyone wanted to make better choices and maintain or achieve REAL health.

Recipes and Co Op information was shared.  If you were not able to attend but would like this information, I will have copies on hand at the next meeting.

We talked about a group distribution list and "cc-ing" each other with comments, suggestions, questions, or information. The email group is officially begun! :) Stay tuned for a Facebook Page!

Also, great questions came up which led to ideas about what the next meeting should look like.

1. How do you eliminate white sugar
2. What to cook for breakfast/samples
3. Smoothie recipes/samples
4. What does raw milk products taste like?

I really like how this just evolved from our discussion. I am assuming that each meeting will be like this and therefore we won't have predetermined "topics".  If topics do not naturally arise, we can come up with one, because there is plenty to talk about!

I had an idea that each person would start a "REAL FOOD" notebook (not necessary but might really keep information organized!).  Now is the perfect time to go to the store and pick out a special notebook to keep all your notes and handouts in from the REAL FOOD meeting.  Also, if interested, get a BIG 3" binder and begin your recipe book :) I am grateful I did this early on because the recipes add up!

The next meeting will be on Saturday Sept 10th at 3:00 (my house)

The TRUTH about Cosmetics

When I first learned what was in typical cosmetics (makeup, lotions, shampoo, conditioner, you name it!) I was FLOORED! Most "cosmetics" are made up of a concoction of chemicals. Even if they state "all natural" or other misleading labels, most are VERY very toxic!

Early in this journey I came across Environmental Working Group's web site "Skin Deep".  This is a huge data base of cosmetics.  Each product is given a ranking 0-10 (zero being the healthiest and 10 being exceptionally toxic).  I began plugging in the "healthy" products I was using and quickly realized how toxic they really were! These toxins cause a multitude of illnesses! That's another whole blog topic!  I began to swap my products out for REAL cosmetics.

I had a SUPER hard time finding healthy nail polishes. Most have gluten (wheat) and many many toxic chemicals.  BUT sure enough, there is a brand that can be trusted! I LOVE this company and their products are exceptional!


Keeki has a fabulous educational video that EVERYONE has 8 minutes to watch! I have posted this video 3 times!  So many people who have watched this video could not believe what they learned! Life changing for sure!
 
This video does a remarkable job explaining in simple terms WHY I refuse to use products that contain harmful ingredients. This will open your eyes to the facts about brands such as "Herbal Essence, Estee Lauder...etc..." and hopefully help you make better choices so we don't continue to produce sick kids and people don't continue to get cancer in there 30's (or worse yet, as a child), etc... etc...! I have already posted on the stats of childhood illnesses... education is the key to making change and better choices.

Blueberry Honey Bars

I am posting a "bar" recipe because you just can't find these in the stores! We do buy Lara bars to eat in a pinch, but other then that, we make our own. Primarily because most bars have some kind of processed, soy based, super unhealthy ingredient in them.  We avoid these as much as we avoid ingredients like corn syrup!

I am a HUGE fan of Heal~Balance~Live web site/blog! Here is an AMAZING super easy recipe that is delicious!  Despite being a "healthy" recipe, you really feel like you are majorly "cheating"!  A super yummy treat!  I modified the recipe a bit, so don't be afraid to change it up if needed. I also did NOT refrigerate, so it's super gooey!  If you don't like gooey I heard fridge and freezer is the best   We liked them SO MUCH at room temp that they never made it to the fridge or freezer. :)

About the ingredients:
In the past, I have blogged about my favorite Almond Flour and Coconut Flour.  I use Digestive Wellness Almond Flour and Wilderness Family Naturals Coconut Flour.  Both of these ground 100% nut flours are AMAZING and super nutritious!

UPDATE:
I tweaked this recipe a tad.
Crust:
I used 3 TBSP of Palm Oil
Sprinkle of Celtic Sea Salt
5 drops of stevia (and 1 tsp of honey as it calls for)
Topping:
1/4 tsp baking soda (vs 1/8 tsp)
1/2 cup pecans (vs 1/4 c)
sprinkle of salt
Note:
In a glass pyrex over the stove I melted:
5 drops of stevia (and 2 tsp of honey)
I added 2 TBSP butter
Then mixed with the dry ingredients.

Antibiotics for Pink Eye? Well, not in our house!

Okay now that is a bold statement! But there is truth in knowing what to take an antibiotic for and what not to!  The point being, there is a time and place for antibiotics.  When Calei was 6 weeks old, medications including antibiotics, saved her life!  But those are the key words in our family.  She had a "life or death" threatening illness that required these drugs.

Unfortunately, antibiotics are routinely prescribed for minor illnesses like ear infections, UTI's, coughs, pink eye, colds and flu etc...  All of which can mostly be fought off using your body, your immune system, and supplements that support and boost your immune system (not hinder it like antibiotics).

Yes, antibiotics work to kill bacteria (not viruses) but it also causes deeper and more serious issues and actually weakens the immune system for up to one year!

Therefore, it is SO important to take personal responsibility for your health and health decisions.  It is my firm belief to not take these potent antibiotics unless absolutely necessary. 

Okay, so WHAT DO I DO?

1.  Instead, support the body's natural ability to heal which allows for long term health.  Do you know in France, Italy, Germany, India and South America alternative health wise people use homeopathy vs conventional medicine?  In England, half of people use homeopathy! http://www.homeopathyworks.net/

2.  Dietary Changes!  Animals you consume are often fed antibiotics and those are directly transferred to you via the meat.  Choose Organic, Grass Fed, Free Range, Humanely Raised meat options.

3.  Wash Your Hands!  Avoid antibacterial soaps! They contain Triclosan which is a dangerous chemical that causes resistant bacteria.  I am constantly reading research that supports that these powerful soaps are not necessary.  This goes for household cleaners too.

4.  Consume Fresh Garlic! Did you know, Garlic is a natural "antibiotic" that bacteria CANNOT become resistant to!

5.  Avoid Pasteurized Milk!  This is a culprit for many health problems these days especially ear infections in children.

6.  Avoid Sugar and Fruit Juices!  These hinder your immune response and make you susceptible to infections.

7.  Don't forget to Pass on the Wheat!  Grains can cause inflammation and do not help when you are sick.

8.  Broth... Broth... Broth... and more HOMEMADE Broth!

9. Up your dosage of a QUALITY probiotic!


I am alarmed at the amount of antibiotics given to babies and small children for every cough, sniffle and ear ache.  Do you know that most ear infections are VIRAL and do NOT respond to antibiotic!  Not to mention, most kids get nasty side effects from antibiotics like rashes and diarrhea.  The American Academy of Pediatrics clearly states: "Allow children 48-72 hours to fight off their ear infection before beginning any antibiotic" http://www.mercola.com/  I highly recommend following their advice!

Here is the deal, most children come down with an ear infection (day #1) and by day#2 they are miserable.  By day #3 parents will take them into the pediatrician and get antibiotic.  By day #4 they are better. My question to those folks out there is this: What if you did all the immune boosting steps above? Would your child have been BETTER by day #4 anyhow? Was it the antibiotics fighting off the "ear infection" OR was the ear infection on its way out? Only you know.  Of course, I must point out, it is best to work with your pediatrician regarding any health issue pertaining to you or your child.

Leave it to Natural News to disclose this latest on the ingredients in Mc D's chicken nuggets! I am sure you won't be surprised but you may be disgusted!  This post got a huge response on facebook so I thought I would include it here:

Breaking News: FOOD ALLERGIES on the RISE! HELLO!!?? That is what I have been saying forever!

SO glad this is FINALLY leaking out, slowly, by mainstream medical.

Food allergies on the rise and they don't know why??
I will tell you why!! LOL!!  Read my blog and many others out there talking about it all! http://www.realnutritionblog.blogspot.com/

Anyway, this is the SAME doc that LAUGHED at me almost 4 years ago when I told her I thought Calei was allergic to corn syrup and food dye. I left Children's Memorial with NO food allergy diagnosis (boy did she miss that one!) and FIVE prescriptions for Calei--she was only 2!!! ALL of which went into the TRASH on my way out of her office. That is when my journey to real health truly began.

Ironically, this doc now has a young child with a food allergy! I can only assume that motivated her to finally do some research.  I am SURE her opinions have changed due to experiencing it for herself with her own child! (vs. taking it from me, who she said was "just" a first time mom and that I was over reacting!)

1:13 kids have food allergies (I think that number is low)

She lists reasons(theories):

1. We are too clean--yeah okay sure-- 100%
2. PROCESSED FOOD! Hip Hip Hooray!!! Did she REALLY SAY THAT!??! OMG! Wonder if she will get fired!?!?!
Don't be fooled! This includes all the GF processed junk food out there too!!!!

And she listed MILK!!!! as being a TOP food allergen! FINALLY!!!!!!!!! (as well as soy, wheat, blah blah blah--)  That does NOT include RAW Milk (which is totally different).

Needless to say,  if your child has any funky "symptom" (rash, behaviors, disease, disorders etc...) or if you do, please look into what they/you are eating. You would be amazed to learn these symptoms can be eliminated on the proper diet.

Organic Fruits and Veggies? YES!

I love the summer months because now is the time for fresh fruits and veggies!  I am asked all the time if you should buy organic or non organic produce.
Sometimes, yes, buy organic, but see below for the details!  You might be surprised!

So, why organic? 

#1. NO pesticides
#2. NOT genetically modified
#3. Healthier (more nutrition)
#4. Better for the environment

What's the big deal about pesticides?

Pesticides were originally designed as nerve gasses for chemical warfare. They were designed to kill living things!  When it was discovered that they worked so well in killing people they decided to use them in smaller doses to kill weeds, insects etc.
They are a powerful neurotoxin, carcinogen and endocrine disruptor.
Pesticides HARM our body. The list is too long to list here!  Please avoid them!

GMO's:

"GMOs, also known as genetically modified organisms, are created by injecting the DNA from one species into another species, creating genetic combinations that cannot occur in nature or through typical crossbreeding methods. This list is ever changing. For instance, just recently I noticed the NON organic Cilantro was tasting, well, like it had a ton of chemicals on it.  EWG published a report on their recent discovery of a TON of pesticides and chemicals on Cilantro! So interesting! :) My tongue knew!

The good thing is, once the chemicals are out of your system, you too will be able to taste them on the fruit or veggie! Its amazing!  I was at a party and I decided to have a blueberry and almost gagged at the taste of chemicals!

Primal Blueprint: Mark Sisson

A book review!

I am constantly asked "What can I read?" Hands down, to date, this is the best book written on getting healthy for life! His writing style is super easy to follow yet backed up by as much science as you want! 
This is not a gimmick diet book. This is a lifestyle book, a lifestyle in which I happen to live (I just didn't have a name for it until now!) I am a Primal girl all the way!

Our overall health around the world is down right poor. If a teacher was grading us on health as a whole, we would get a big fat "F".  50% of children have some kind of disorder or disease! One out of 2! Alarming really!  Not to mention, obesity, diabetes, heart disease, and cancer rates climbing to all time highs!

Mark explains how to literally reprogram your "genes" by following 10 "Primal" laws.  These laws are backed up by extensive research and understood by studying two million years of human evolution. (This research is FASCINATING to say the least!)

Mark writes how to permanently lose weight by eating REAL food and never gain a pound again!  He explains a balanced approach to fitness by NOT over exercising. He talks in detail that the key of loosing excess body fat and maintaining weight is controlling your production of insulin.

I loved the information on Grains! Too much info for this blog. MUST read the book! :) In the beginning of this journey, I wasn't even clear what a grain was! Just in case you are like I was here ya go: wheat, bread, pasta, crackers, cereal, rice etc....  Yep the stuff you eat and then get gassy from, or have to unbuckle your pants, or the foods that leave you in a coma like state! Not good!  The SAD (Standard American Diet) is too grain heavy.  Just think about what you eat every day.  We consume way way too many of these for our bodies to handle properly leading the body to be in a compromised state.
Grains make you FAT and SICK, and we do NOT digest the protein structure and excessive carb load in grains.  Grains cause blood glucose levels to spike and interferes with mineral absorption. Grains inhibit fat metabolism  and promote disease.   The list of reasons "why" to avoid grains is endless!

Mark explains how eating Organic Grass Fed meat and eggs and how a high "GOOD" fat diet is essential for human health and a key to weight loss, a healthy immune system and an abundance of energy.  No need for afternoon caffeine laden energy rush drinks on this lifestyle.  NO catching every single cold virus you come in contact with on this lifestyle. And yes, you can get back to the weight you were in high school! (unless that was not an ideal weight :)


At the end of the day, Mark uses the 80/20 rule. Live "Primal" 80% of the time. This allows flexibility. I love that! Even though over here I would say we are more 100% Primal, we are still in a "healing stage" from years of NOT eating Primal.  Once we are over the hill sort of speak I could see us following the 80/20 rule.

Hi there!

Well, its finally here! A REAL FOOD meet up group! Edie, Laura and I have been talking about doing this and here it is!

This group is being formed to bring like minded folks together to discuss REAL FOOD, long-term, life-long optimal health!

I hesitate listing topics because they are endless :) but include: allergies, permanent weight loss, preventing illness, child/baby/pregnancy nutrition, exercise (not what you might think!), book reviews, where to purchase real food etc... ( I am sure I am missing some big ones listed here!)

REAL FOOD recipes will be available to taste at the meetings.  If you do decide to bring a REAL FOOD recipe, please bring the recipe with and I can print copies of the recipe for those interested.

Everyone is welcome no matter where you are at on your health journey! PLEASE pass along!

What about EGGS? Are they healthy?

YES! YES! YES! Big Time!
Bread is a staple in the SAD (Standard American Diet).  While we pass on the bread here in the Clark household, eggs are a staple in our diet :)  We consume eggs daily in some form!
Raw yolks being my first choice (easy to add to a smoothie!), then scrambled eggs, eggs mixed in bakery items, you name it! In my opinion, and in much of what I read, eggs are superior nutrition.  However, all eggs are NOT created equal and what prompted me to blog about it!
So, how do your eggs stack up?
You will be AMAZED at how lousy store bought eggs are for you!

The quality of eggs means how nutritious they are for you (or not). Organic, free-range eggs are clearly your best choice.  However, there are problems in the weak organic egg regulations that allow organic producers to slip their eggs through despite not being up to par. Read again :)
The BEST eggs come from chickens that can graze outside on bugs and grass.  I say “best” because these eggs contain more nutrients!  Not to mention they taste dramatically better!  They LOOK and FEEL different too. Their shell is hard.  Healthy egg yolks look dramatically different then store bought eggs. These yolks are the deepest orange and firmly formed when you crack open the egg. (vs light yellow and runny) and the whites are clear.  Now, this is not the best picture.  I took this with my phone, but can you spot the ORGANIC healthy egg?

Now the picture quality is NOT there, but in "real life" there is a dramatic difference in appearance on the inside and out!

ORGANIC, FREE RANGE, GRASS FED (pasture) hens eggs have 1/3 less cholesterol, 1/4 less saturated fat, 2/3 more Vitamin A, 2 times more omega 3 fatty acids, 3 times more Vitamin E, 7 times more beta carotene, 8 times more Vitamin D, more folic acid and B12. AMAZING!
Eggs provide eight essential protein building amino acids and contain six to seven grams of protein and five grams of fat which helps in the absorption of all the egg’s fat-soluble vitamins.  Remember you need FAT to absorb the nutrients. (This is why I always say, eat FAT with those veggies or fruit!)  Eggs contain the minerals iron, phosphorus, potassium and calcium.  Choline is another nutrient contained in eggs.  It is a fatty substance found in every living cell and is a major component of our brain. Choline helps break up cholesterol deposits by preventing fat and cholesterol from sticking to the arteries.  See, EGGS are our friend!
These nutritional differences between store bought and farm eggs are most likely due to the chicken’s diet.  Chickens are omnivores and must consume both animal and plant sources.  A vegan diet prevents chickens from being truly healthy and therefore prevents them from producing healthy eggs.  For instance, store bought hens are fed grains and corn based junk and are kept in cages inside.  Most of these eggs are treated with chlorine baths! YUCK!
Here is a story:
So I know all this about eggs, yet have a hard time digesting eggs without running to the bathroom shortly after consuming! (sorry for the details) I discovered I am FINE with Organic Free Range Grass fed eggs! FINE! So, therefore, it MUST have been what the chicken were consuming that was irritating me!  I do not eat corn or grains, but if the chicken LIVES on corn and grains and I consume the chicken's egg, well I will have problems! Interesting needless to say!
MORE YOLKS PLEASE!
Back in the day, I was the gal to eat egg whites and tossed the yolk! What was I thinking!??! A BIG BIG no-no! Egg
yolks are the BEST source of lutein and zeaxanthin (antioxidant nutrients).  Yolks are known to combat macular degeneration and cataracts and supporting overall healthy vision.  They have a long list of other benefits, including protecting the skin from sun damage and even reducing one’s risk of colon and breast cancer! Not to mention, eggs have been around since the beginning of time! LOL! I will talk more about “OLD” foods vs. “NEW” man-created foods. This is a biggy!

So, how do you find these eggs?
If at all possible, I would encourage you to avoid buying all store bought eggs unless you have no other choices. Ideally it would be best to locate a local famer where the chickens are fed well and raised in humane conditions and allowed to eat insects.


I belong to the Lemont Co Op here in IL. There, you have access to healthy TRUE Organic eggs.  Prior to this, I got my eggs at Garden Patch Farms in Homer Glen (off of 159th street) These chickens do not graze on grass but are let outside year round and allowed to pick at the ground.  They are fed a corn based diet so they are not ideal but better then store bought.

THE down right WORST eggs are the Omega-3 fortified eggs! I know! You are probably like WHAT??!! I see people buying these at the store all the time and want to literally whip out a brochure talking about eggs!  The chickens tend to be fed poor quality sources of Omega 3 fats that are already OXIDIZED! YUCK AGAIN!

SUGAR Part 2 (short and "sweet" and to the point!)

After all the reading, I believe Stevia is the best option. PLEASE, NOT the junky, processed Stevia!

And now for a quick, real-life story!

My daughter finished her last day of swimming. A sport, exercise, something you would relate to health and fitness, right? Wrong. At the last class, her instructor began to pass out Dum Dum suckers! Calei politely said "no thanks, they have corn syrup and food dye in them". 

I was SO PROUD!

Now, the next part of the story I have NO CLUE WHY I said what I did! I told her, "Calei when we get home you can have a Trader Joes sucker!" (no corn syrup or food dye but OMG tons of sugar!!!)  She was like "okay"... but really NO BIG DEAL!

We get home and I pull out the suckers (WHO KNOWS why we still have these from Halloween--she doesn't eat them!) and then remember we had dates in the fridge. I said "Calei, would you like a sucker or dates?"

She happily yells, "dates, dates, dates!!!"

SO I was EVEN MORE PROUD!

WOW have we come FAR! What an amazing journey! And she is learning all this at FIVE years old! YIPPY! Great day in the Clark household!

SUGAR: White Death!

Ooo yep, I said it, DEATH! I have learned SO MUCH about sugar... enough to make my head spin! And I know, that MOST people do not know this information because if they did, they would NOT consume sugar at ALL, let alone give it to their kids and BABIES (see formula blog!) I attempted to write this blog myself, but decided to give as many details as possible and use Raymond Francis's article. Its lengthy, but SO WORTH the read! You will NOT regret it one bit! If you don't do anything BUT eliminate sugar from your diet (all forms) you will be WAY ahead of the game!

Health is a choice. If you choose health, sugar is not an option. Sugar is a dangerous metabolic poison and a leading contributor to our epidemic of chronic disease. If we want to vastly improve health, one single choice we can make is to stop, or at least minimize, sugar consumption. The less you eat and the less frequently you eat it, the better off you will be.

History
Our biologic ancestors did not have access to sugars in the refined forms that exist today. Sugar was a rare commodity, found primarily in fresh fruits, or perhaps a batch of honey. Advents in technology brought forth the first sugar refineries during the Napoleonic period. At that time sugar was expensive, and average consumption was about 7 pounds per year. By the end of the 19th century, sugar was affordable, and available to almost everyone.
Since 1909, sugar consumption has increased by 70%!! Americans now eat an average of about 150 pounds of sugar per year, up 25 pounds (20%) since 1970!!

Until recently, man ate no refined sugar at all. Not being designed for it, even a small amount of sugar throws the body into biochemical chaos for a period of 6 to 8 hours. Sugar is actually an anti-nutrient.  Rather than supplying the body with nutrients, as a food is supposed to do, sugar actually robs the body of nutrients.

What is an anti-nutrient?
Sugar disturbs the mineral relationships in our bodies.  The body has to use minerals, vitamins and enzymes at alarming rates!  For example, to metabolize only ONE molecule of sugar the body requires 56 molecules of magnesium leading to magnesium deficiency!  Magnesium deficiency leads to problems like high blood pressure, and neurological and immune issues!


In terms of caloric content, sugar makes up more than 25% of the
average American's diet and up to 50% of some children's diets! An empty calorie food with no nutritional value whatsoever, sugar is replacing valuable complex carbohydrates as a source of energy for humans. Historically we did not eat these refined sugars, and doing so throws the body into a chaotic state of disregulation.

Overview
Here's the problem: The human body was simply not designed to handle refined sugars. They bring about a deadly combination of malnutrition and toxicity. Feeding refined sugar to a human body is similar to burning high-octane aircraft fuel in an automobile engine. Impressive amounts of energy, but after a while, you damage the engine. Metabolizing refined sugar is quite a challenge, but if forced to, the body will struggle to cope with it. This struggle causes serious disturbances, and after time, disease is the guaranteed result!!
If sugar were introduced today as a new product, the FDA would not approve it. FDA approval requires that a product be safe. Evidence that sugar damages health is overwhelming. It has been associated with diabetes, tooth decay, heart disease, cancer, and other diseases. In fact, the rise of chronic disease in modern societies has paralleled the rise in sugar consumption. When these facts are examined, one might consider feeding sugar to children a form of child abuse... Instead, we give children sweets as a "reward" for being good!  (Not to mention, read my blog on FORMULA!)

Nutrient Deficiencies
Food is supposed to support life. Sugar will not support the life of humans, animals, insects, or even bacteria!! Sugar really isn't food! Sugar requires specific nutrients in order to metabolize in the body. The refining process strips these nutrients from the source materials like sugar cane, so that metabolism requires the body to deplete itself. The body uses up its reserves, causing deficiencies of various B vitamins, magnesium, chromium, and other nutrients.

Here are some examples of clinically significant
sugar-related deficiencies:

20 psychotic teenagers, being unsuccessfully treated with psychotherapy and tranquilizers, were completely cured by vitamin B1 supplementation. Sugar had depleted their B vitamin reserves making them deficient and causing abnormal behavior. One can be sure there are tens of thousands of teens out there right now with similar problems.

Chromium deficiencies have been linked to both excessive sugar consumption and heart disease. Coronary disease patients average twice the sugar consumption of healthier people, and have significantly less chromium in their tissues.

Sugar and vitamin C use the same transport mechanism. Excessive sugar intake overloads this transport system and may cause vitamin C deficiencies.

Sugar inhibits the release of omega 6 essential fatty acids from storage in fat tissues, thereby contributing to essential fatty acid deficiency.

Oh there is more!
Metabolic Chaos: Heart Disease, Hypoglycemia & Immunosuppression

Sugar throws body chemistry into biochemical chaos lasting for six to eight hours after consumption.  During this period, hormone, fat, carbohydrate, and protein metabolism are greatly disrupted. After consumption, refined sugar is rapidly absorbed by the body, which dangerously increases the sugar content of the blood. Excess sugar causes production of excess insulin, which signals cells to take up sugar. Cells then absorb sugar, to get it out of the bloodstream. This solves one problem but creates another: Now the body's cells have too much sugar. To correct this imbalance, cells turn the sugar into saturated fats and cholesterol. This brings us to heart disease.  In terms of heart disease, eating sugar is similar to eating saturated fat, only much worse because sugar creates a lot of other problems. Increased insulin levels not only tell the body to store fat, but they alsotell it not to release fat. This makes people get fat and stay fat. It causes fat to be deposited in our cells and organs, resulting in atherosclerosis, fatty liver and kidneys, and obesity. These fats cause blood cells to become sticky thereby increasing the chances of blood clots, strokes and heart attacks. Sugarincreases "bad" LDL cholesterol, decreases "good" HDL cholesterol, and increases triglyceride levels in the blood. If antioxidant vitamins and minerals are deficient, these triglycerides can be oxidized causing serious health problems. In addition, red blood cells are choked by the saturated fats and this reduces
their ability to carry oxygen to our tissues.

Hypoglycemia (low blood sugar)
is another problem caused by sugar consumption. When insulin is secreted into the blood, it makes blood sugar levels fall rapidly. Insulin levels remain high however, so the body continues to take up sugar beyond the point where it needs to. The result is hypoglycemia.
Symptoms include weakness, dizziness, crying spells, insomnia, aggression, and depression. Sugar in breakfasts or lunches can cause children to do poorly in school. They become hypoglycemic about 60 minutes after eating sugar and this affects brain function. Many teachers claim that their students are "brain dead" after lunch, and this is why.

Sugar-induced hormone imbalances tax and weaken the immune system to the point where it can no longer defend the body. When insulin causes blood sugar to fall excessively low, the adrenal glands secret hormones that pump blood sugar back up. Daily consumption of sugar causes an overworked biochemical balancing act resulting in adrenal exhaustion, which in turn decreases the body's ability to respond to future stress. Adrenal exhaustion is now a common problem in the chronically ill. Sugar quadruples adrenaline levels, while increasing both cholesterol and cortisone. Cortisone is known to depress immune function. Studies show that the ability of white cells to destroy harmful bacteria is
reduced as sugar consumption rises. This is why children, who eat lots of sugar, are more susceptible to colds, flu, and other infections.

Allergies:
Sugar causes food allergies. Most food allergies start with improperly digested food. Sugar reduces the supply of digestive enzymes leading to incompletely digested food. Undigested food molecules enter the blood stream where the immune system sees them as the enemy and attacks them, forming antibodies.
Regular eating of a food to which one has become allergic causes regular reactions, leading to immune exhaustion and a variety of related problems.

Osteoporosis:
Sugar is a leading cause of osteoporosis. Sugar increases calcium loss in the urine. When the body is loosing calcium, in order to keep blood calcium within normal limits (homeostasis), the body removes calcium from the bones. Physicians, not understanding the cause, are often mystified when their osteoporosis patients have normal blood calcium levels, while suffering bone loss.

Immunity
Sugar depresses immunity. Sugar damages the function of immune cells, causing immunity depression and reaching a low about two hours after ingestion. Those eating sugar several times a day will suppress immune function all day. Combine this with the immune exhaustion resulting from sugar-causing food allergies and you have a real problem.

Arthritis
Sugar causes arthritis by first causing food allergies, which result in the formation of immune complexes.  Immune complexes can collect in and do damage to joints. Another mechanism is that joints can accumulate excessive calcium as a result of sugar, causing altered calcium metabolism

Fiber Deficiency
Humans were designed to derive energy from complex carbohydrates, which are naturally high in fiber.
By contrast, a high sugar diet provides calories without the fiber that is essential to human health.
Insufficient fiber causes materials to move too slowly through the digestive tract. This can cause constipation, which is a big problem in our society. It also causes waste to remain too long in the colon where it can serve as food for harmful bacteria, thereby producing gas and toxins, and promoting intestinal inflammation and bloating.

Fiber has been shown to remove toxic and carcinogenic substances from our bodies.
Lack of fiber leads to toxic absorption and excessive stress on the liver.
Fiber binds to hormones like estrogen and removes them from the body. Without fiber, the estrogen may be reabsorbed and excess estrogen is known to cause disease.
Fiber slows down the rate of sugar entry into the blood stream, so foods like sweet fruits are suitable and healthy alternatives to refined sugar.
Fiber has been shown to improve diabetes control because high fiber diets greatly reduce the need forinsulin.

Conclusive Research
Human volunteers who were fed sugar experienced a rise in cholesterol levels plus a marked increase in blood pressure.
Laboratory animals died sooner when sugar was added to their diet.
Rats fed a high sugar diet did less physical work, were unable to reproduce as well, and had shortened life spans.
Other animal experiments concluded that refined sugar "causes serious disturbances in carbohydrate and lipid metabolism," and caused diabetes in the animals.
People who have little contact with refined sugar have virtually no tooth decay.
The saturated fats produced by sugar metabolism cause pimples, acne, senility, and heart disease.
A high sugar diet increases the severity of premenstrual syndromes in college women.
Sugar feeds cancer cells causing them to grow faster and has been linked to colon, kidney, prostate, breast, rectal, ovarian, uterine, and nervous system cancer.

In our society, staying away from refined sugar is no easy task. Sugar is added to most processed foods and many food labels list sugar under more than one name. This can be confusing to the consumer.

There is so much sugar in processed foods that manufacturers try to hide the truth by using different kinds of sugar.
Look for sugar under names like:

Sucrose, glucose, fructose, maltose, maltodextrin, raw sugar, brown sugar,
turbinado sugar, honey, rice syrup, corn syrup, maple syrup, concentrated fruit juice, barley malt etc...

Sugar in whole fruits is acceptable, but not so in fruit juices because the lack of fiber allows rapid absorption of the sugar.

Most especially, don't feed sugar to children. The dangers of eating sugar were even known to the ancient world. In the Bible, Proverbs 25:27 says, "It is not good to eat too much honey." We seem to have forgotten this ancient wisdom.

A sure sign of toxicity is a craving for sugar. This means that the body's chemistry has become so dysfunctional that it now depends on sugar. Excess sugar is so toxic that to get rid of it the body coverts it into saturated fat. This fat accumulates in arteries and other organs, doing long-term damage.


Deficiency and toxicity are the two causes of disease, and sugar is a leading contributor to both. This is why sugar is a major cause of our modern epidemic of chronic, degenerative diseases.
Few Americans die of old age. Most of us die from preventable chronic diseases such as cancer, heart disease, stroke, and diabetes. These are the direct result of chronic abuse to our body chemistry.
