Blueberry Honey Bars

I am posting a "bar" recipe because you just can't find these in the stores! We do buy Lara bars to eat in a pinch, but other then that, we make our own. Primarily because most bars have some kind of processed, soy based, super unhealthy ingredient in them.  We avoid these as much as we avoid ingredients like corn syrup!

I am a HUGE fan of Heal~Balance~Live web site/blog! Here is an AMAZING super easy recipe that is delicious!  Despite being a "healthy" recipe, you really feel like you are majorly "cheating"!  A super yummy treat!  I modified the recipe a bit, so don't be afraid to change it up if needed. I also did NOT refrigerate, so it's super gooey!  If you don't like gooey I heard fridge and freezer is the best   We liked them SO MUCH at room temp that they never made it to the fridge or freezer. :)

About the ingredients:
In the past, I have blogged about my favorite Almond Flour and Coconut Flour.  I use Digestive Wellness Almond Flour and Wilderness Family Naturals Coconut Flour.  Both of these ground 100% nut flours are AMAZING and super nutritious!

UPDATE:
I tweaked this recipe a tad.
Crust:
I used 3 TBSP of Palm Oil
Sprinkle of Celtic Sea Salt
5 drops of stevia (and 1 tsp of honey as it calls for)
Topping:
1/4 tsp baking soda (vs 1/8 tsp)
1/2 cup pecans (vs 1/4 c)
sprinkle of salt
Note:
In a glass pyrex over the stove I melted:
5 drops of stevia (and 2 tsp of honey)
I added 2 TBSP butter
Then mixed with the dry ingredients.

This is one of my FAVORITE recipes!
