Coconut Bars (from Elana's Pantry)

Once again, another GREAT recipe coming from Elana's post! BUT here is the deal: Calei LOVED this recipe (I mean LOVED!), I "liked" this recipe but thought it was missing something (I figured it out), and Kev thought it was bland.
SOOO, not sure if people will like it or not. Needless to say, IF you are on this journey and do not consume SAD, please give this a try. Its super easy and would be great for breakfast!

Preheat oven at 350 degrees

3 eggs
1 cup of canned coconut milk
1/3 cup of coconut oil
1/3 cup of honey (I used 1 TBSP of honey and 15 drops of Stevia, total, in this recipe)
1/8 tsp of Liquid Stevia
1 TBSP vanilla

Mix in blender or food processor (I love this easy clean up method of mixing ingredients BTW!)

Then add:
1/2 cup almond flour
1 TBSP coconut flour
1 1/2 cups unsweetened shredded coconut
1/4 tsp celtic sea salt

Blend all ingredients together.

Rub coconut oil in 8x8 pyrex dish and transfer ingredients to dish.
Bake for 30 minutes
Cool for 1/2 hour
Place in fridge 1/2 hour and serve chilled.

We ate it both warm and cold (couldn't resist waiting!)

Now here is my slight variation: Top with pineapple. I used frozen pineapple from Trader Joes. I can now say I LOVED this recipe! Elana says you can drizzle with chocolate. Calei says its perfect the way it is!

This is SUCH an interesting cake. No way to describe it. A must try! A dense like cake.  It is also SO incredibly healthy!

The Products I Currently Use

So many people ask me what brands/products I use. There are MANY healthy products out there and MANY toxic products as well! Just like with food, I tend to look at the ingredients. For instance, most people know to NOT buy anything with parabens or sodium lauryl sulfates in them. Some natural ingredients have long hard names that "looks" like a chemical name but is actually something that is safe (plant extract etc...)
Also, I have yet to find an entire product line that I like 100%. In general, some products are just hard to find, some product lines only have a few products that are healthy, some are just too expensive etc... its tricky!

I rely on http://www.cosmeticsdatabase.com/ (Skin Deep) and googling/researching the names of ingredients.

Here is a quick list I compiled of products I currently use--but this list always changes :) :
Please note, some are not "ideal" but are certainly NOT as toxic as the stuff I used to use or that the majority of people currently use!

Cleaners:
Home Made: Borox, Essential Oils, Vinegar, Water, Lemon etc..
TJ's Liquid Laundry Detergent
Earth Friendly Furniture Polish (Jewel, Whole Foods)
Vinegar/Water for glass cleaner

Store Bought: Earth Friendly and Seventh Generation in general are BOTH optional product lines.

Soap/Shampoo etc...:
TJ's Next to Godliness Hand Soap
Giovanni Organic 50/50 Shampoo and Conditioner (WALMART!)
Dr. Bronners Bar Soap (Lavender or Almond) (Whole Foods or Target)

Weleda Sage Deodorant-spray (Whole Foods) NO ALUMINUM! I LOVE IT!
This was a HUGE step for me. I was so unsure about NOT using your "typical toxic deodorant". Sure enough this works!!! Plus what I have learned is that when you eat a clean diet, you just don't stink like most people! No joke! So if you are pigging out on Burger King and Taco Bell, well, not sure if it would work!?

Jason Kids Only Toothpaste-Strawberry (Whole Foods--Gluten Free BTW!)
Me; Baking soda, coconut oil, essential oils, sea salt.
Coconut Oil (for lotion)
Essential Oils and Water for "perfume"
TJ's Face Wash with Tea Tree Oil
Simply Organic Hair Spray (Jus Hair Organic Salon or online)
**This whole line is in general safe. However, VERY $$!
Giovanni Vitaporfusion Leave in Hair Treatment (Walmart)
Almay One Coat Mascara
Mineral Fusion Nail Polish
L'Oreal Bare Naturale Mineral Foundation
Covergirl Concealer

And last but not least, everyone knows I am a FLOUR SNOB! I ONLY use Digestive Wellness products and Wilderness Family Naturals. BOTH phenomenal web sites and companies!
