Coconut Bars (from Elana's Pantry)

Once again, another GREAT recipe coming from Elana's post! BUT here is the deal: Calei LOVED this recipe (I mean LOVED!), I "liked" this recipe but thought it was missing something (I figured it out), and Kev thought it was bland.
SOOO, not sure if people will like it or not. Needless to say, IF you are on this journey and do not consume SAD, please give this a try. Its super easy and would be great for breakfast!

Preheat oven at 350 degrees

3 eggs
1 cup of canned coconut milk
1/3 cup of coconut oil
1/3 cup of honey (I used 1 TBSP of honey and 15 drops of Stevia, total, in this recipe)
1/8 tsp of Liquid Stevia
1 TBSP vanilla

Mix in blender or food processor (I love this easy clean up method of mixing ingredients BTW!)

Then add:
1/2 cup almond flour
1 TBSP coconut flour
1 1/2 cups unsweetened shredded coconut
1/4 tsp celtic sea salt

Blend all ingredients together.

Rub coconut oil in 8x8 pyrex dish and transfer ingredients to dish.
Bake for 30 minutes
Cool for 1/2 hour
Place in fridge 1/2 hour and serve chilled.

We ate it both warm and cold (couldn't resist waiting!)

Now here is my slight variation: Top with pineapple. I used frozen pineapple from Trader Joes. I can now say I LOVED this recipe! Elana says you can drizzle with chocolate. Calei says its perfect the way it is!

This is SUCH an interesting cake. No way to describe it. A must try! A dense like cake.  It is also SO incredibly healthy!

Did you defrost the pineapple or eat it while still frozen?!?

Since the cake was in the fridge cold, I just used frozen pineapple. It was SO delicious! GREAT for a summer treat! :) Very refreshing! Tropical. Amazing!
