RECIPE:
1. Buy a whole organic chicken at a store like Trader Joes or Whole Foods
2. Prep your kitchen. Gather ingredients. Gather baking supplies. See below.
3. Preheat oven at 350 degrees.
4. Open up chicken and take out bag inside chicken cavity.
5. Using scissors open this packet and place in stock pot. Add water to cover giblets. This is the beginning of your broth!
6. Rinse Chicken well.
7. Put chicken in 9x12 Pyrex dish
8. Rub with Olive Oil and sprinkle on Celtic Sea Salt and Pepper. (or other seasonings)
9. Place an peeled Organic Onion of choice into the cavity of the chicken
10. Place in oven uncovered and cook for 1 ½ - 2 hours.
TIME SAVER: At this time you can Prep your broth! See recipe below. Then once chicken is out of oven, cooled, and sliced, you can add carcass to stock pot and begin cooking broth!
11. Check chicken with meat thermometer. Chicken is done when it reaches 170-180 degrees.
12. Allow Chicken to sit for 15-30 minutes. The longer the better!
13. Slice Chicken onto a plate and serve.
14. Add the carcass to your stock pot and begin broth recipe.
Notes:
You can use a variety of seasoning on top of the chicken.
Rosemary is FABULOUS with chicken. Oregano, Basil, Thyme gives more of an
Italian taste. Garlic is also amazing!
Don’t forget to eat the crispy skin! It’s SO delicious! We
call the skins “crispies” in our house.
Don’t forget to make your broth with your chicken bones and
giblets!

Chicken BROTH:
RECIPE:
Add to your stock pot along with carcass:
6 peeled ORGANIC carrots cut in half
Rinse well and cut off ends of 6 celery ORGANIC stalks
(or ½ a bag of celery). Then cut celery in half.
1 inch chunk of fresh ORGANIC ginger. Use a peeler to take skin off. Put the rest
in freezer to store for later use.
4 ORGANIC garlic cloves chopped
1 tsp of Braggs Apple Cider Vinegar
1 TBSP of Celtic Sea Salt
1 TBSP of Peppercorns or 1 tsp of Pepper
1 TBSP of Organic Parsley
1 Organic Bay Leaf
Add water to fill the pot to the top
NOTE: If you did not add an onion to your whole chicken,
please add one onion to your stock. Otherwise, just use the onion that cooked
in your chicken.
Put lid on ½ way allowing air to get in the pot. Cook on stove overnight on low. Your house will smell like heaven in the
morning. If you are not comfortable cooking overnight, place stock pot in
fridge and begin cooking in the morning. Cook broth for 12 hours minimum.
Strain into a glass Pyrex dish.
Notes:
Freeze into ice trays OR begin soup recipe.
Also, this same recipe can be used for Beef Broth (just
use beef soup bones) or Vegetable Broth (just omit the meat)

Chicken Vegetable SOUP:
Recipe:
Place broth in stock pot.
Add the following ingredients:
2 cups of washed, peeled and diced Organic Carrots
2 cups of washed, peeled and diced Organic Celery or ½
bag
2 cups of diced Organic Onion
2 cups of Organic Zucchini chopped (about one medium
zucchini)
1 cup of Organic Peas (Frozen)
1 cup of Organic Green beans (cut to 1” length) (Frozen)
4 Garlic Cloves diced small
2 TBSP of Parsley
1 package of Organic boneless skinless chicken breast cut
into small pieces
2 TBSP of Celtic Sea Salt
1 tsp of Pepper
Cook for 6-8 hours on low in a crock pot.
1 hour before soup is done begin cooking rice as instructed
on package. We like to use Jasmine Rice.
Add 1-2 cups of cooked rice to this soup and serve.
Notes:
Once soup is cooked please add more salt/pepper as
needed. The right amount of salt with make or break this recipe. Don’t be
afraid to add more! Celtic Sea salt is
loaded with vitamins and minerals.
