Spiced Black Eyed Pea Salad

Properly prepare Black Eyed Peas:
Soak 2 cups of Black Eyed Peas with a splash of Apple Cider Vinegar overnight.

Drain and Rinse
Cook as directed the next day

In bowl mix:

Black Eyed Peas
1 cup Diced Tomato
½ cup Diced Red Onion
¼-1/2 cup Diced Jalapeno Peppers
3-4 Garlic Cloves (Pressed)
½ Fresh Lemon (Squeezed)
Cilantro (as much as you like)
1 tsp Cumin
1 ½ tsp Celtic Sea Salt


You can use this salad on top of greens.  This is very filling and can be eaten as a meatless meal!
